Caramel Syrup
- 40 g softened butter
- 1 tbsp water
- 100 g brown sugar
Cake
- 2 large apples, peeled, cored, thinly sliced
- 200 g softened butter
- 85 g Milk
- 3 eggs
- 1 tsp Vanilla Bean Paste
- 75 g brown sugar
- 75 g caster sugar
- 250 g Self Raising Flour

Preheat oven to 170C.
Line a 22cm springform tin, ensuring the base and sides are covered so the syrup cannot drip out.
Add all caramel syrup ingredients to mixing bowl. Cook 3 minutes/100C/speed 2.
Pour syrup into prepared tin. Arrange thinly sliced apples over syrup.
Add all cake ingredients to mixing bowl. Mix 20 seconds/speed 4. Scrape down sides. Mix 10 seconds/speed 4.
Spread cake batter over sliced apples.
Bake one hour or until golden brown and firm to touch. Leave sitting in tin for 5-10 minutes before turning onto serving dish.
Serve warm as a dessert, or cooled as a cake.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

So delicious and looks gorgeous on the plate! I doubled the baking paper and cooked in a springform tin for an hour at 150 fan. A little of the sauce did leak, so next time I’ll use a tray on the bottom oven rack. Makes a huge dessert so great to feed a crowd. Thanks for sharing!
Delicious and presents well. Used coconut sugar also. Less in batter. Yum heated up the next day also.

I put half the apple in the bottom and half through the middle, next time will put it all on the bottom (the caramalised apple was fantastic!).
I cooked at 150 deg for 40 mins in my fan forced oven.
Just yum, a really simple caramel (which I would double next time) and terrific cake. Quick and easy.
