Ingredients

Nut Butter

  • 80 g Cashews
  • 40 g almonds
  • 30 g coconut oil
  • 10 g Coconut Syrup

Remaining Ingredients

  • 140 g Mixed Nuts
  • 70 g Mixed fruit
  • 200 g coconut oil
  • 95 g cacao powder
  • 90 g Coconut Syrup
  • 75 g Shredded coconut

Recipe's preparation

    Nut Butter
  1. 1. Place cashews and almonds in Thermomix and blitz for 1 minute / speed 9

    2. Add coconut oil and coconut syrup and blend for 30 seconds / speed 5. Set aside

  2. Remaining Ingredients and Assembly
  3. 1. Place mixed nuts and mixed fruit into Thermomix bowl, Closed lid"Closed lid" and Turbo for 1/2 second / 2 - 3 times. Set aside

    2. Place coconut oil in Thermomix and melt for 3 minutes / 40C / speed 1.5

    3. Add cacao powder and coconut syrup and mix for 2 minutes / 40C / speed 1.5

    4. Add shredded coconut and fruit / nut mix and mix for 15 - 20 seconds / Counter-clockwise operation"Counter-clockwise operation" speed 1

    5. Pour 1/2 the mixture into a lined tray (25 x 25mm)

    6. Place the nut butter on the top of the choc rough mixture

    7. Cover with the remaining choc rough mixture. Place in the freezer for 1 - 2 hours. Break or cut into pieces

     

     

Tip

I used Almonds and Cashews for my mixed nuts but you can use any nut of choice

For the fruit I used black currants and cranberries as I ran out of goji berries

Stores best in fridge (or freezer)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
