- 530 g Self Raising Flour
- 250 g coconut cream
- 150 g Milk
- 50 g raisins
- 50 g Desiccated Coconut
- 1 pinch salt

Preheat oven to 210°C.
2. Place all ingredients into bowl and mix for 3 seconds on speed 8.
3. Set dial to closed lid position. Knead for 30 seconds on Interval speed to form a soft and sticky dough.
4. Place on a lightly floured surface and press out to 3 cm thick round.
5. Cut into round shapes using a scone cutter or glass to yield 12 scones.
6. Line tray with baking paper and set scones on top making sure they touch.
7. Bake for 15-17 minutes or until golden brown at 210°C.
Tip
1. Don’t over knead your dough.
2. Lay out each scone touching each other on baking tray.
3. Keep a smile on your face while making the scones.

These were delicious! The coconut cream ensured that the scones were nice and moist and not too dry! Lovely flavour. Will make again
Glad you like the recipe. I was also using the MC which makes smaller scones and fantastic that you were able to yield 18. I'll try the trick with milk next time.
I used Thermomix MC as scone cutter and got 18 good sized scones that were 7-8cm tall. I also brushed with milk prior to baking. Coconut gives lovely texture. Maybe a little more sugar if you are having them plain. Great recipe - foolishly easy!
