Ingredients
Cashew Cream
- 300 g Cashews, soaked in water for about 6 hours
- 3 teaspoon Vanilla Bean Paste
- 2 tablespoon Pure Maple Syrup
- 100 g filtered water, or as needed to achieve desired consistancy
Chocolate Mousse
- 2 Avocados, flesh only
- 2 tablespoon raw cacao powder
- 2 tablespoon Pure Maple Syrup
Raspberry Puree
- raspberries, about 1/2 punnet
Garnish
- 1 tablespoon pistachio nuts, chopped
- 1 teaspoon raw cacao nibs

Drain the cashews and place in the thermomix bowl with the vanilla bean paste, maple syrup and half of the water.
Blend for 10 seconds, speed 9. Scrape down sides and blend for 30 seconds more, speed 9, adding more water if necessary to achieve a creamy consistancy. Set aside.
Blend all mousse ingredients together for approximately 30 seconds, speed 7, or until well blended and mixture is a creamy mousse like consistancy.
Mash raspberries with a fork in a teacup or small bowl.
Layer cashew cream, chocolate mousse and raspberry puree in glasses. Repeat layers if necessary.
Serve with chopped pistachio nuts and raw cacao nibs if desired.
