Ingredients

Chia Pudding

  • 130 grams fresh pineapple
  • 100 grams Watermelon (cubed)
  • 45 grams Cashews
  • 90 grams water
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 10 grams honey
  • 20 grams white chia seeds

Recipe's preparation

  1. Place all ingredients except the chia seeds into the bowl and mix for 20 seconds on speed 6

  2. Scrape down the sides of the bowl

  3. Mix for a further 15 seconds on speed 7

  4. Add chia seeds and mix for 1 minute at speed 3 in reverse

  5. Pour into two bowls and refrigerate for at least 3 hours before serving

Tip

Alternatively, the juice of 1 1/2 oranges could be used in place of the pineapple and watermelon for a less rich dessert.

Adjust the amount of honey depending on how sweet the pineapple is.
