Ingredients

Base

  • 200 g Marie biscuits, (we use Niece)
  • 95 g Butter

Filling

  • 110 g castor sugar
  • 250 g cream cheese
  • 1 egg
  • 1 lemon, juice of
  • 125 g pure cream

Topping

  • 190 g pure cream
  • 1 tbsp icing sugar

Recipe's preparation

    Before you start
  1. Prepare slice tray by greasing with butter
  2. Pre-heat oven to 170 degrees celsius (150deg for fan forced)
  3. Base
  4. Place butter into bowl and melt 1min 30sec / 60degrees /Speed 3
  5. Add biscuits and finely crush 20secs / Speed 5
  6. Firmly press biscuit mixture into slice tray and set aside
  7. Filling
  8. Place all ingredients into bowl and mix 20secs / Speed 5
  9. Pour cheesecake mixture over base and bake for 20mins (or a little less if you prefer the cheesecake to be blonde)
  10. Remove from oven and leave until cooled
  11. Topping
  12. Place butterfly into position
  13. Add cream and icing sugar and beat together speed 3 until the cream is whipped
  14. Spread cream over cheesecake
  15. Cut pieces into desired size - Gar always used a ruler to ensure the pieces were even!

Tip

This can be made Gluten Free by using a gluten free biscuit.
It can also be made Dairy Free - we have used Flora Thickened Plant Cream and NUDAIRY'S Cream Cheese Alternative

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
