Ingredients

Puddings

  • 300 g mixed dry fruit
  • 50 g Pedro Ximinez sherry
  • 100 g pitted prunes
  • 100 g whole almonds
  • 100 g Butter
  • 100 g Dark Brown Sugar
  • 25 g molasses
  • 1 tsp bicarb soda
  • ¼ tsp ground cloves
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp star anise
  • ½ tsp ground cardamom
  • 1 free range egg
  • 100 g plain flour
  • 80 g breadcrumbs (premade in Thermomix)
  • 1.5 l water for steaming

Custard

  • 60 g raw sugar
  • 20 g cornflour
  • 2 free range eggs
  • 450 g full cream milk
  • 60 g Pedro Ximinez sherry

Recipe's preparation

    Puddings
  1. Place dried fruit into a glass or ceramic bowl, cover with sherry, and allow to soak overnight.

  2. Grease 10 small dariole moulds and place into the Varoma dish and tray. Set aside.

  3. Place prunes and almonds into the mixing bowl and chop 6 sec/speed 6.

  4. Add soaked fruit, butter, sugar, molasses, bicarb soda and spices. Cook for 20 min/100'C/Reverse/speed 4.  Allow to cool for about 30 minutes.

  5. Add egg, flour and breadcrumbs and mix 1 min/Reverse/speed 4.

  6. Spoon mixture into prepared dariole moulds. Cover tops of moulds with baking paper and then a sheet of aluminum foil, tucking edges around the moulds. Place 1.8L water into mixing bowl and place Varoma dish and tray into position. Steam for 60 min/Varoma/speed 2. Remove Varoma and set aside to cool.

  7. Custard
  8. Place sugar and cornflour into mixing bowl and mill 10 sec/speed 9. Scrape down sides of bowl with spatula.

  9. Add all remaining custard ingredients and cook 7 min/90'C/speed 4.

  10. To serve
  11. Turn puddings out onto individual serving plate and serve with warm custard.

    These tasted lovely - I was abit concerned as the fruit didn't stay 'whole' like a traditional pudding but the end result was tasted excellent!

    When you say 'you give them a drink' what does that actually entail? How much? Do you leave them in the moulds? This Christmas pudding thing is all new to me.

    I would probably make them up and put them in a Tupperware container in the fridge. They should keep until Christmas. You can also pierce them a few days later and give them a little extra alcohol, which is good for a rich flavor & preservation. 

    I used to make my puddings in November and give them a drink each week - always turned out sensational. Good luck!
