Ingredients
Krofne (Soft and fluffy Doughnuts)
- 1 heaped teaspoons Dry active yeast
- 260 grams full cream milk
- 2 heaped tablespoons sugar
- 1 --- egg
- 1 --- egg yolk
- 375 grams plain flour
- 1 heaped teaspoons salt
- 20 grams olive oil
- 1 heaped tablespoons melted butter
- vegetable oil, For frying

- Place the yeast, milk and sugar in the mixing bowl, then mix 37°C/ speed 6."No counter-clockwise operation"
- Place the remainder ingredients in the mixing bowl (except for the vegetable oil) Mix 20secs / speed 6. scrape down sides.
Then "Dough mode" knead /2 minutes - Transfer sticky dough to bowl or lightly floured Thermomix bread mat. Knead the dough into a ball.
Cover the dough with a cloth and leave in a warm place for about an hour. - After an hour, knead the dough once more and roll it out with a rolling pin approx 1cm thickness.
Take out the circles with a glass. Cover them with a cloth and leave for 15 minutes to rise. Then turn them to the other side and leave for another 15 minutes. - Shallow fry the krofne in hot oil. Lower them into the oil so that the upper raised side is now facing down. As soon as they are dipped in oil, close the lid. When the underside turns golden brown (it's a matter of seconds), remove the lid and turn the krofne to the other side, but now leave them uncovered until the donuts are fried (again it's seconds)
Remove the krofne with a slotted spoon and place them on a paper towel. - Allow to cool and serve will desired filling - custard, jam, Nutella or dust with icing sugar. Enjoy!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
