Mango (Weiss-like) ice cream
- 5 egg yolks
- 150 g raw sugar
- 500 g thickened cream, 36% fat
- 200 g full cream milk
- 2 tsp vanilla extract
- 1/2 mango, desired amount

- Place all ingredients except mango in "Closed lid" and cook 8 min 80 deg speed 4.
Place in fridege to cool at least 3 hours (preferably overnight). - Churn vanilla base in stand alone ice cream churner/bowl for best results- takes between 15-25mins depending on churner and how cool the mixture is.
Whilst vanilla base is churning place mango in "Closed lid" and puree 6sec speed 4 or until well pureed.
When ice cream close to soft serve consistency add the mango puree to the churning ice cream. - Freeze ice cream in container for at least 3 hours prior to serving.

Tip
You can churn the ice cream in "Closed lid" like other ice cream recipes on the recipe community but this results in a very icy and hard product. Best results are achieved churning the ice cream in a frozen bowl attachment to a mixer or a dedicated ice cream churner/compressor.
