Ingredients

  • 125 grams Caster sugar
  • 2 eggs
  • 250 grams self-rasing flour

Mock Cream

  • 4 tablespoons Butter
  • 4 tablespoon caster sugar
  • 1 tablespoons Boiling water
  • 3 tablespoons Milk
  • 1 teaspoons vanilla essence

icing

  • 1/4 litres tepid water
  • 2 heaped tablespoons icing sugar
  • red food colouring
  • 250 grams desicated cocnut

Recipe's preparation

    Cakes
  1. pre heat oven to 230 degrees

    add butter and sugar mix on speed 4 for 30 seconds

    scrap down sides

    beat further 10-15 seconds untill creamy

    add eggs slowly while beating through the TM lid

    scrap down sides

    add flour and beat speed 5 for 10 seconds

    scrap down sides

    beat further 10 seconds until soft dough

    spon mixture into gem irons and cook for 10-15 minutes
  2. Mock Cream
  3. Easy Mock Cream
    Mill sugar 8 sec sp 10, until icing sugar consistency
    Insert Butterfly. Add Shortening and Vanilla Extract. Mix 30 sec sp3
    Slowly add water and milk, whipping until you get a really thick, smooth and combined mix.
    spoon or pipe into cream buns, finger buns for jam donuts, or on top of your favourite cake.
    ice cakes and match them together with similar size and use red food colouring icing and cocnut to finish
  4. Icing
  5. combine all ingredients and roll peach cakes in icing and cover with desicated coconut

Tip

put the gem irons in the oven first for 10-15 mintutes to get the trays very hot before spooning in mixture, this ensures even cooking

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
