Ingredients

Pear, apple and ginger sorbet

  • 100 grams sugar, sugar
  • 1 green apple, Green apple,fresh or frozen, quartered
  • 1 green pear, fresh or frozen, quartered
  • 2-3 cm piece of fresh ginger, according to taste
  • 300 gram coconut milk, frozen into ice cubes
  • 350 grams ice cubes
  • 1 egg white

Recipe's preparation

    Pear, apple and ginger sorbet
  1.  Place sugar in TM bowl and process on speed 9 for 10 seconds. 

    Add fruit, egg white, ginger and frozen coconut milk and slowly turn to speed 10.  After  20 seconds (30 seconds if using frozen fruit),  add remaining ice and process for 1- 1 ½  minutes on speed 10.

    Variations

    Substitute frozen yoghurt for the coconut milk

    Add a shot or two of vodka for an alcoholic version – great with oysters!!

    A  small cooked meringue can be used instead of the egg white

    I was nervous about using a raw egg white, so I replaced it with one and a half shots of vodka. The consistency was still very nice.

    I also used only 200g of frozen coconut milk, and I thought the flavours (coconut, apple, and pear) balanced out very nicely.

    This is so delicious. I didn't have any pears so I used one green apple and one red apple. Also, instead of sugar I used Natvia stevia, but only 50grams. So yummy. Big Smile

    This is the best sorbet I've tried so far. I used two pears and a heaped teaspoon of ginger from the jar (none fresh on the day) and it was Devine! I'm off to freeze more coconut milk.

    Hi,  Sorry to take so long to reply.  The recipe has now been updated to show 1 egg white.  We suggest using a small cooked meringue if you are cooking for anyone who might be allergic to raw egg white.  Adding the egg white or meringue gives a smoother texture.

    I made this for my girls on the first day of receiving my Thermo mix - I didnt put the ginger in and used one egg white......  They absolutely loved it all three of them, which they normally have very different tastes but they loved this.......

    I'd love to make it, but the author hasn't put in how many egg whites to use. And substituting with a meringue nest? That sounds rather odd....
