Ingredients
Chocolate
- 200 g cacao butter
- 120 g Coconut butter
- 120 g cacao powder
- 3 tbsp Honey, Maple or Coconut Syrup
- 1 tbsp vanilla powder or extract
- 1 tsp cinnamon powder
- 1 tsp cardamom powder
- 1 - 2 drops Rose oil
Filling
- 50 g Shredded or Desiccated Coconut
- 2 tsp Beetroot, finely grated - retain the juice for the colour
- 1 tbsp Honey, Maple or Coconut Syrup
- 1 pinch sea salt, tiny

Place the Cacao Butter in the "Closed lid" chop Sp 6 for 10 sc
add the Coconut Butter in the "Closed lid" Temp 45 8 min Sp 2 Add in Cacao Powder, sweetener, vanilla, cinnamon, cardamom and rose oil Sp 4 10 sec scrape down and repeat. Make sure it is well combined, then set aside.
Place the coconut in "Closed lid" Toast Temp Varoma Sp 2 for 15 min.
Check that it is lightly toasted when it has just started to gain colour -you may have to cook for longer, add the beetroot with as much juice as you can, sweetner and salt
Mix Sp 4 for 20 sec - may need to do longer till well combined.
Place the filling in the two mould sets (I used heart moulds) making sure you evenly distribute, sprinkling it in without packing down.
Pour over the chocolate mixture, gently tapping the mould down on the bench to allow the air bubbles to escape, top up with chocolate and repeat till the cocolate settles down into the filling repeat.
I found there was enough of the chocolate to make another set of 12 in iceblock moulds that I added dried cranberries and slithered almonds.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
