Ingredients
Semolina Custard
- 60 g to 100g Sugar to taste
- 3 egg yolks, or 2 whole eggs
- 1/2 cup semolina, or 100g
- 3 cups milk, or 750ml
- 1 tsp vanilla sugar or essence
- 1 tsp Butter

Place eggs and sugar into bowl and mix for 1 minute on speed 6 or until mixture has paled in colour. Scrape down bowl.
Add semolina and milk and cook for 7 minutes at 90C on Reverse + speed 4.
Once thickened add vanilla and butter and mix on Reverse + speed 3 for 10 seconds or until just combined.
Semolina Custard
Tip
I've used 2 whole eggs and works just as well.
Can add cinnamon on top and can be served as breakfast or dessert.
Can also be used as a filling to a cake.
Depending on desired thickness, can use between 80g to 110g of semolina.

I doubled the mixture and used it as filling for my Galaktoboureko. 200g sugar, zapped a couple of times to fine it, 4 whole eggs and the vanilla. Whisked it as the recipe says. Than I added 200g semolina and whisked it into the eggs for a few seconds. Then the milk. 90C, Sp 4 (reverse) for about 11 minutes, or until thickened. Perfecto!

This is so delicious. I made it with one whole egg and one egg yolk just because I didn't want to throw away 2 egg whites. It was delicious served warm as soon as it was cooked but equally just as yummy served cold the next day. I need to stop eating it!

I made this tonight and it's so yum.
I had to add another five minutes to the cooking time because I had course semolina.
I added some cinnamon too coz we love it.

I had some semolina in my cupboard that I was looking to use up and stumbled across this recipe, I love it! I replaced the milk and butter for lactose free alternatives. Thanks for the receipe. It is going to be one of my favourties.

This is so yum! Winter staple for sure, did around 70g sugar and sweet enough, my 2 yr old will love it as I did!
