Ingredients

Steamed Lemon Puddings

  • 3 teaspoons lemon zest, grated, No white pith
  • 100 g raw sugar
  • 150 g unsalted butter, Room temperature, cut into 1-2cm cubes
  • 3 eggs
  • 220 g self-raising flour
  • 1 teaspoons vanilla essence, Or bean paste
  • 65 g lemon juice
  • 1000 g water
  • Ice Cream, To serve

Recipe's preparation

    Steamed Lemon Puddings
  1. Grease 8 dariole moulds
  2. Place Lemon zest and sugar into mixing bowl and mill 15 sec/speed 9. Pour into bowl and set aside.
  3. Without washing bowl, Add Butter to mixing bowl. Melt for 3 min/70°C/speed 1.
  4. Add sugar and zest mix to bowl and mix 10 sec/speed 4. Scrape down sides and bottom of mixing bowl with spatula and repeat mix 10 sec/speed 4.
  5. Scrape down sides and bottom of mixing bowl with spatula. Add eggs and mix 10 sec/speed 3. Scrape down sides and bottom of mixing bowl with spatula again
  6. Add flour, Lemon juice and vanilla and mix 10 sec/speed 4. Scrape down sides and bottom of mixing bowl with spatula. Mix again 10 sec/speed 4.
  7. Divide batter evenly between each mould, filling to about 1cm from the top. Place moulds into the Varoma Dish.
  8. Rinse mixing bowl then Add water to mixing bowl. Place Lid on Mixing Bowl then Place Varoma dish and lid on top.
  9. Steam for 35 min/Varoma/speed 1.
  10. Allow to cool for 2 minutes then upturn each pudding into bowls and gently squeeze each at the base to help loosen pudding from mould.
  11. Serve with Lemon Curd (see Notes) and whipped cream or icecream (or both)
