Tau Foo Fah
- 250 g soy bean, soaked overnight
- 2 litres water
- 1 tsp cornflour
- 1/2 tsp GDL
- 30 g water
palm sugar syrup
- 200 g palm sugar
- 100 g brown sugar
- 150 g water

- 1. Soak 150g soy bean overnight. Drain the soaked beans, add into TM bowl with 500g water, 1 min/Rev Speed 6.
- 2. Add 800g water and mix well 5 sec/Speed 4
- 3. Sieve blended soya milk with a muslin cloth.
- 4. Weigh sieved soya milk back into cleaned TM bowl
- 5. Boil for 20 mins/98°C/Speed 2 (with covered Varoma/simmering basket on top instead of MC).
- 6. Meanwhile, Mix well ingredients B (1 tsp cornflour, half tsp GDL powder, 1 tbsp water) in a ThermoServer.
- 7. Once soya milk is boiled, allow the temperature to come down to 80°C
- 9. Allow tau foo fah to cool and set for about 45 mins. Serve in small portion with some palm sugar syrup
- Place 200 g palm sugar, 100 g brown sugar and 150 g water, pandan leaves.
Cook 5 mins| 100C |sp 2 - serve 1 sccop of set tau foo fah with a little bit of the palm sugar
