Ingredients
- 750 grams thickened cream (chilled), Full fat, unprocessed if possible
- 250 grams Milk, Full fat, unprocessed if possible
- 150 grams Maple syrup
- 1 level teaspoon vanilla extract, not essence it needs the small amount of alcohol in the extract to ensure consistency of ice cream
- 1/4 teaspoon vanilla bean
- 1 teaspoon corn flour or arrowroot powder
- 1 pinch salt
- 4 egg yolks

1. Add the egg yolks,maple syrup, vanilla extract and salt into the TM bowl and mix for 2 mins on speed 7.
2. Add the thickened cream, milk, vanilla bean and arrowroot flour into the TM bowl and mix again for 2 minutes on speed 7.
3. Pour into a freezer safe container and let set for 4-6 hours.
4. Then scrape back into your TM bowl, add the butterfly and whip for approximately 1-3 minutes on speed 4.
5. Thereafter, refreeze for at least another 2 hours and serve.
