Tip

If you don't like a very strong peppermint flavour I would suggest using half of the peppermint extract and then adding to taste

This was so delicious! I did adapt it quite a bit based on what ingredients I had on hand. I used a few sprigs of fresh mint from my garden instead of the peppermint extract and just chopped those separately first on speed 9. I used about 5 dates and dark choc chips instead of cacao nibs. I also used cows milk instead of almond milk. Worked out perfectly! Next time I might try it with the almond milk and cacao nibs - thanks for the great recipe! tmrc_emoticons.)
