Ingredients

Burgers

  • 250 g Asiago cheese, (can subsitute with swiss or cheddar slices)
  • 180 g walnuts
  • 2 tsp black peppercorns
  • pinch of sea salt
  • 1 kg beef mince
  • 1 tbsp Worcestershire sauce
  • rocket leaves, to taste
  • 1 large tomato, sliced
  • 100 g TM mayonnaise
  • 6 slices bacon, cooked
  • 6 burger buns

Dressing

  • 1 tsp seeded mustard
  • 2 tbsp Raw Honey
  • 4 tbsp red wine vinegar
  • sea salt, to taste
  • 100 g Evoo, (extra virgin olive oil)

Recipe's preparation

    Dressing
  1. Place all ingredients except EVOO into mixing bowl and combine 10 sec/speed 6.

  2. Add EVOO and stir through 4 sec/speed 6.

  3. Drizzle over rocket leaves and set aside.

  4. Burgers
  5. Clean mixing bowl.

    Place cheese into mixing bowl and grate 2 sec/speed 6. Set aside.

  6. Place walnuts, peppercorns and salt into mixing bowl and mill 6 sec/speed 7.

  7. Add beef mince, sauce and grated cheese to mixing bowl and combine 10 sec/ReverseCounter-clockwise operation"Counter-clockwise operation" /speed 7 with the aid of the spatula.

  8. Form into 6 - 8 equal size patties, place onto tray lined with baking paper, and refrigerate until ready to cook.

  9. Burger Assembly
  10. Char grill buns and patties to taste.

  11. Cook bacon.

  12. Spread mayonnaise on bottom half of buns, add cooked burger patty, top with slice of tomato, dressed rocket leaves and a slice of bacon.

    Drizzle with additional dressing if desired.

    Serve immediately.

    Made many more portions that prescribed. Yummy. We used cheddar but would like to try with asiago.

    way more than 6 serves!

    The first time i made these the burgers were dinosaur sized!! We made them again and got 12 large sized. I add garlic at step 5 and use jahlsberg cheese.

    Do it for you next BBQ! Yum. Didn't have enough walnuts so used pumpkin seeds. 9 massive burgers. 7 yo who doesn't generally like burgers loved it too.

    Best burgers I have made yet! The dressing is amazing and adds so much to the burger! Made them for a bbq that we had, and have given everyone the recipe as they all LOVED them!!!

    I made this tonight and it's the best... I mixed beef and pork mince, and used cheddar as I don't have Asiago cheese. Cook them in Airfryer, yum! This will be a regular. Thank you posting the recipe.

    So tasty!  Just the best to make with real meat for patties rather than shop bought mince.  I used the beetroot salad too - delicious!
