Butter Chicken
- 50 grams Cashews
- 1 onion
- 2 cloves garlic
- 3 cm ginger
- 2 tablespoons Butter Chicken Curry Powder, (Link to recipe in "TIPS")
- 2 tablespoons Oliver oil (or Ghee)
- 100 grams tomato paste
- 150 grams yoghurt
- 1 tablespoon white vinegar
- 300 grams tomatoes, halved
- 300 grams water
- 1 tablespoon Vegetable stock paste
- 800 grams chicken, cubed

Add cashews to bowl and mill 20secs/Sp9. Set aside, clean and dry bowl.
Add onion, garlic, and ginger. Chop 3secs/Sp7.
Add curry powder and oil (or ghee) and saute 3min/100°C/Sp2.
Add tomato paste, vinegar, yoghurt, tomatoes, water and stock. Cook 10min/100°C/Sp1.
Add reserved milled cashews. Blend 1min/Sp9.
Add Chicken and cook 10min/100°C/Sp1"Counter-clockwise operation" .
Serve with Steamed Rice or Naan Bread.

Awesome, whole family loved it!
Beautiful recipe. Made the linked curry powder and used it in this recipe. Instead of fresh tomatoes I used a tin of tomatoes and only used 1/3 cup of water to compensate for the juice out of the tinned tomato. Perfect.

I agree. I have cooked this twice. Gave some butter chicken spice as gifts around Christmas and it turned out delicious both time. Will be a regular in my household and when entertaining.
Butter chicken......heard soooo much about it! Rather exciting. Firstly, I followed the spice mix recipe to the letter. Wow, my kitchen smells AMAZING. (actually, I believe the spice roasting time can be reduced to 6 mins) Toasted spice mix, cooled,milled and jarred. I'm definitely going to make batches of this for friends.
Next I clicked onto the recipe link. Having viewed the other recipes for butter chicken, this resonated with me.
I was skinny with the tomato paste and generous with the yoghurt, and went off piste by adding 50g creamed coconut.......just taste tested resulting curry: FANTASTIC

This was the first thing I made in my thermie and it was devine. I've made butter chicken before but it's never been that good. I used the butter chicken curry powder in the link.
I made this tonight for my husband & I and my gosh! What a fantastic meal!! I made the spice mix at lunch time, then put it all together tonight. And lucky us - we have enough left over for tomorrow night as well. Very flavoursome sauce. Lotsa character and complexity. Tastes like a very authentic curry. I didnt add peppercorns and reduced the chili and it was just right.This one is firmly in my favourites collection. Will def make again (and again, and again...)
Oh bummer! Can I ask how much of my spice powder recipe you used? Usually that packs quite a big punch but you can add more for a more full on flavour. Also did you use the same quantity of cashews? That works as a fab thickener for the sauce usually.. eek! Thanks for the feedback.
Made this for diner tonight, not really a big hit everybody found it too bland and it was quite watery had to add salt to try and balance the flavor and some cream.
