Ingredients

  • 1 onion
  • 1 clove garlic
  • 500 g diced lamb
  • 250mL pumpkin soup, (used home made roast pumpkin soup)
  • 250ml crushed tomatoes or passata
  • 4 --- Small Potatoes, diced
  • 1 punnet cherry tomatoes
  • 1 cup frozen peas & corn
  • Salt and pepper, to taste
  • couscous and craisins, to serve
  • 3 tablespoons Quince paste

Recipe's preparation

    1.
  1. Halve onion, peel garlic and place in thermomix for 3 seconds, speed 6

    Scrape down sides of bowl.

    Cook 100C Speed 1 for 2 minutes

  2. Add diced lamb. Cook 100C reverse speed 1 for 3 minutes

  3. Add pumpkin soup, crushed tomatoes/passata, potatoes, quince paste and cherry tomatoes.

    Cook for 100C for 30 - 40 minutes, reverse speed soft

    Add frozen peas for the past 5 minutes of cooking

  4. If the sauce is still too liquid, can thicken with cornflour and water

    Serve with couscous (mixed with craisins, salt and pepper
