Ingredients
- 2 piece brown onions, peeled & halved
- 2 cloves garlic, peeled
- 3 cm fresh ginger piece
- 2 tbsp oil, e.g. ghee, olive oil
- 7 leaf Curry Leaves
- 1 tsp turmeric powder
- 2-3 tsp chilli powder, (can be ommitted)
- 1 tsp Cumin Powder
- 2 tsp coriander powder
- 1.5 tsp salt
- 1.5 tbsp white vinegar
- 1000 g diced lamb
- 2 piece green chilli, Halved, split, seeds removed if desired (can be ommitted)
- 3 tbsp Coconut Flour, toasted
- 125 g coconut milk

Place onion, garlic and ginger in bowl, insert MC, blitz for 6 seconds on speed 6. Scrape down bowl, and blitz for a further few seconds if any chunks are left.
Add the oil and curry leaves to the bowl, insert MC, and cook for 5:00 on Varoma "Counter-clockwise operation" "Gentle stir setting" .
Add turmeric powder, insert MC, cook for 30 seconds on Varoma "Counter-clockwise operation" "Gentle stir setting" .
Add remaining spices, insert MC, cook for 1:00 on Varoma "Counter-clockwise operation" "Gentle stir setting" .
Add salt and vinegar, place basket on lid, cook for 1:00 on Varoma, "Counter-clockwise operation" "Gentle stir setting" .
Add the lamb and green chillis, insert MC, cook for 5:00 at 110 degrees, "Counter-clockwise operation" "Gentle stir setting" , reduce to 100 degrees and cook for a further 20:00, "Counter-clockwise operation" "Gentle stir setting" .
Scrape down the sides of the bowl. Add the coconut flour and coconut milk, place steaming basket on lid, cook for 10:00 on 100 degrees, "Counter-clockwise operation" "Gentle stir setting" .
Check that the sauce has thickened - if still too runny, place steaming basket on lid, and cook a few more minutes on 100 degrees, "Counter-clockwise operation" "Gentle stir setting" .
Serve with steamed rice and natural/greek yoghurt.

Tip
Toast the coconut flour in a dry non stick pan - stir constantly, take care not to burn it.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
