Ingredients
Sage Spiced Turkey Meatloaf Meal with Red Wine Tomato Sauce
- 70 g parmesan, cubed
- 4 sprigs sage, fresh, leaves only, be generous for extra flavour
- 4 sprigs flat-leaf parsley, stems included
- 1 sprig rosemary leaves, fresh, leaves only, be generous for extra flavour
- 5 cloves garlic, or to taste
- 500 g turkey mince, can substitute for cubed breast, slightly frozen
- 2 eggs
- 50 g panko breadcrumbs, (or regular breadcrumbs, can eliminate if coeliac or gluten intolerant)
- 1 pinch salt, or to taste
- 1 pinch ground black pepper, or to taste
- 1 tablespoon Thermomix Vegetable Stock Paste
- 10 slices prosciutto, (gluten-free if coeliac)
- 6-8 slices double-smoked ham, (sandwich sized, gluten-free if coeliac)
- 100 g mozzarella cheese grated
- 8-10 Chat potatoes, skins on
- 2 Carrots medium, skins on, spiralised
- 2 zucchini medium, spiralised
Red Wine Tomato Sauce
- 2 cloves garlic, or to taste
- 180 g brown onion, cut into halves
- 4 sprigs flat-leaf parsley
- 1 celery stalk, cut into pieces
- 40 g olive oil
- 150 g red wine, dry
- 400 g Whole peeled tomatoes, canned (or fresh)
- 2 tablespoon tomato paste, (concentrate)
- 1/2 teaspoon cayenne pepper, (optional)
- 400 g sweet potato, peeled, cut into pieces (2-3cm)
- 150 g potatoes, skin on, cut into pieces (2-3cm)
- 150 g carrots, skin on, cut into small slices (1cm)
- 1 pinch salt, or to taste
- 1 pinch ground black pepper, or to taste
- 2 teaspoons Worchestershire sauce

Place Parmesean cheese, fresh sage, fresh flat-leaf parsley, fresh thyme and garlic into "Closed lid" and chop 10 sec/speed 10. Scrape down the sides of "Closed lid" with spatula.
Add the turkey mince and mix "Counter-clockwise operation" 10 sec/speed 4. (If using slightly frozen breast cubes, Turbo/1 sec/6-10 times to mince.)
Add eggs, panko breadcrumbs, salt, pepper, Thermomix vegetable stock paste, and mix 20 sec/speed 5.
On a ThermoMat or baking paper, lay the prosciutto lengthways, overlaping each piece so total length is not more than 25cm.
Place mince mixture onto the prosciutto and gentle press into a rectangle shape covering the prosciutto.
Along the bottom of the rectangle (the part approximated 25cm in length), lay the double smoked ham along the edge. There only needs to be a strip of ham across this side.
Sprinkle the grated mozzarella along the ham and roll the mince like a Swiss roll, and make sure the prosciutto is wrapped securely around the outside.
Grease the Varoma tray and place the meatloaf roll onto the centre. Place the chat potatoes on the outer egde of the Varoma tray. Be sure not to overcrowd the tray.
Set Varoma aside ready to cook with the red wine tomato sauce below.
Place garlic, onion, fresh parsely and celery into "Closed lid" and chop 3 sec/speed 7. Scrape down sides with spatula.
Add olive oil and sauté for 3 mins/120°C/speed 1.
Add red wine, canned tomatoes, tomato paste, sweet potato, potato, sliced carrot, cayenne pepper, worchestershire sauce, salt and black pepper and cook 5 min/Varoma/speed 1.
Place Varoma with meatloaf and potatoes in position and cook 35 min/Varoma/speed 1.
Add spiralised zuchhini and carrot to the Varoma dish and continue to cook for a further 5 min/Varoma/speed 1 or until meat is cooked through and the zuchinni and carrot are cooked to the desired tenderness.
Gently slice the meatloaf and serve with the potato and spiralised vegetables. Sauce can be poured on top of served on the side.
TIP: Meatloaf presents well without the sauce.

Tip
You may be temped to use an oven as this is the traditional way to cook a meatloaf. Steaming the meat locks in the flavours and juices and this recipe is designed for steaming. If you really feel you need crisp prosciutto possibly look for few minutes under a griller or a high-heat oven prior to serving.
