Stuffed capsicums (peppers)
- 4 Capsicums (peppers)
- 40 grams Parmesan cheese, cut into pieces (3cm)
- 100 grams Cheddar cheese, cut into pieces
- 1 brown onion, cut into quarters
- 2 garlic cloves
- 3 slices bacon
- 30 grams olive oil
- 500 grams Beef mince
- 250 grams cooked rice
- 1 tablespoon vegetable stock
- 1 teaspoon mixed dried herbs
- 1 can tomato soup

- Preheat oven to 180°C
- Grate parmesan cheese for 10 seconds on speed 10 and set aside
- Grate cheddar cheese for 10 seconds speed 7 and set aside
- Place onion, garlic and bacon into bowl and chop for 5 seconds on speed 6 and scrap down the sides of the bowl
- Add oil and cook for 3 minutes at 120°C on speed 1
- Add in the mince and cook for 5 minutes at 100°C on speed 1.5"Counter-clockwise operation"
- while mince is cooking cut the capsicums in half, clean out the insides and remove the stalks and place them into a greased baking dish with hollow side up
- when mince is finished cooking add in 200g of the tomato soup, reserved parmesan cheese, vegetable stock and mixed herbs and mix for 15 seconds on speed 4"Counter-clockwise operation"
- Spoon mixture onto the halved capsicum
- spoon over a tablespoon of the leftover tomato soup onto each half and top with the grated cheddar cheese
- Bake for 15 minutes at 180°C until the cheese is all melted and golden brown
Tip
the capsicums and be served with a salad or vegetable
or can serve more people as a side with rice
any left over mince mixture can be baked in a dish for 15 minutes

Rice is not included in the method so I added it with the other ingredients
