Ingredients

One Pot Meal

  • 1-1 1/2 tablespoons curry powder, (to suit your taste)
  • 1 1/2 tablespoons cornflour
  • 500 g skinless chicken breasts, (cut into strips or cubes)
  • 1 --- onion
  • 1 --- large garlic clove
  • 30 grams olive oil
  • 1 --- tomato, (Cut into 1/4)
  • 1 --- green apple, (peeled, deseeded & cut into 1/4)
  • 70 g sultanas
  • 2 tablespoons Chutney or Mustard Pickle
  • 2 tablespoons apricot jam
  • 1 tablespoon TM stock paste
  • 150 g water
  • 150 g coconut cream

Recipe's preparation

  1. 1. Place cornflour, curry powder and chicken strips/cubes into a snaplock bag and mix until chicken is coated. Set aside.

     

  2. 2. Place onion and garlic into TM bowl and chop 3 seconds/speed 7

     

  3. 3. Scrape down sides of TM bowl. Add olive oil remove MC and saute 3 min/120 degrees/speed 1

     

  4. 4. Add tomato and apple and chop 3 seconds/speed 7

     

  5. 5. Scrape down sides of TM bowl. Add cornflour, curry and chicken mixture remove MC and saute 5 min/120 degrees/speed 1

     

  6. 6. Add sultanas, chutney (or mustard pickle), apricot jam, stock, water and coconut cream. Give it a good stir then use TM basket in place of MC and cook 15 min/100 degrees/speed 1

     

Tip

Once completed pour into Thermoserver and serve with rice.

    Successfully made this in my TM31, as I didn't read that I shouldn't until I was well into the preparation. Lovely flavour. I will put in some extra veges next time, but overall really nice. I am looking forward to it being my "go to" recipe when everyone says "whatever" about what they want for tea.

    I made this recipe tonight with chicken breast. Yum! I then made a batch with pork scotch steak that had to be used up.  Easy, cheap and tasty!

    Hi. I'm so sorry I only saw this tonight. I don't use reverse because I like my chicken chopped up a bit and shredded. But u certainly can use reverse if you like.
