Ingredients

Deepa's Kitchari

  • 50 grams Mung Dahl (split), soaked in water 3 hours
  • 50 grams red lentils, soaked in water 3 hours
  • 100 grams basmati rice, soaked in water 3 hours
  • 1 tablespoon Coconut Oil or Ghee
  • 1 teaspoon cloves
  • 1/2 teaspoon fennel seeds
  • 1 cinnamon stick
  • 2 teaspoons cumin seeds
  • 1 teaspoons black mustard seeds
  • 1 freshly grated ginger, large, palm sized lump
  • 1-2 small Green Chilis, chopped
  • 1 tablespoons salt
  • 400 grams Veggies, zucchini, eggplant, green beans, bell peppers, etc.
  • 1/2 teaspoon tumeric, dried
  • 900 grams water

Recipe's preparation

  1. Soak Mung Dahl, Red Lentils and Basmati Rice separately for 3 hours.
  2. Add the Coconut Oil to your Thermomix and heat for 3 mins/Varoma Gentle stir setting"Gentle stir setting"
  3. Add Cloves, Fennel Seeds, Cinnamon Stick and cook 3 minutes/ Varoma Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
  4. Add Cumin Seeds and Black Mustard Seeds and cook 3 minutes /Varoma Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Turned out great!! I used olive oil instead of coconut oil and added 600g water in the last step instead of 900 as I prefer the texture to be a bit thicker.
