Mujaddara - Lentils and Rice
- 3 large onions, peeled and quartered
- 200 g dried green lentils, (or brown) rinsed
- 900 g warm water
- 1.5 tbsp stock paste
- 400 g basmati rice, rinsed
- 2 tsp Thermomix Christmas spice mix, (search Recipe Community)
- 1 tsp ground cumin
- 125 g oil, (1/2 cup)
- 2 tsp cumin seeds
- pinch pepper, black, ground
- pinch salt
- 500 g Greek yoghurt
- 200 g hummus
- 2 tomatoes, diced
- 2 lebanese cucumbers, diced
- 3 sprigs parsley, roughly chopped
- 1/2 tsp lemon juice

- Chop onions, 5 seconds, speed 5. Remove onions from bowl and set aside.
- Place lentils into the bowl, and add the warm water and stock paste.
- Place rice into the simmering basket and add spice mix and ground cumin and stir with the spatula.
- Place simmering basket into the bowl and cook 20 minutes, 100 degrees, reverse "Counter-clockwise operation" , 1.5 speed.
- While the rice and lentils are cooking, heat the oil in a frypan on medium-high heat.
Add the cumin seeds and pepper and fry for about one minute.
Add the chopped onions and salt, stirring regularly and and cook until onions are caramelised to a deep brown colour and are a bit crispy. This will take at least 15-20 minutes. If the onions start sticking to the pan, add a splash of water. - Stir rice, and cook a further 12 minutes, 100 degrees, reverse "Counter-clockwise operation" , 1.5 speed.
- Meanwhile, prepare tomatoes, cucumber, and parsley.
Mix the ingredients together in a bowl, and sprinkle with lemon juice. - Place the rice into a large Thermoserver and pour in cooked lentils (there should be a small amount of liquid remaining in the lentils). Stir with a spoon until mixed and cover until ready to serve.
- Serve lentils and rice in bowls, top with onions, tomato and cucumber mixture, hummus and yoghurt.

Cooked meat can be added at step 8.
