Ingredients

Broccollini, basil, tomato & bacon risotto

  • 40 g Parmesan block
  • 1 bunch Broccollini
  • 12 Vine Ripened Cherry Tomatoes, halved
  • 2 Bacon rashers diced
  • 2 teaspoons Edc vege stock concentrate
  • 460 grams water
  • 1 Small brown onion
  • 2 cloves garlic
  • 20 grams olive oil
  • 180 g Aborio Rice
  • 100 g white wine
  • 15 g Butter
  • 1 stalk Celery
  • baby spinach leaves to taste
  • basil leaves, fresh, to taste

Recipe's preparation

  1. Place Parmesan Cheese into mixing Bowl and Grate 10 sec/speed 8 Set grated parmesan to the side. Rinse & dry bowl.

     

    Place baby Spinach leaves into thermoserver and set aside. 

    Place Onion, Garlic & Celery into TM bowl and chop for 6 seconds on speed 7.  Scrape down sides of bowl with spatula. 

     

    Add olive oil and bacon and sauté for 5 minutes at Varoma on Counter-clockwise operation"Counter-clockwise operation" Reverse speed 1.

    Insert butterfly whisk. 

     

    Add risotto rice, butter and wine then sauté for 2 minutes at 100ºC on Counter-clockwise operation"Counter-clockwise operation" Reverse + speed 1.5 without MC.

    Scrape down sides of bowl with spatula. Add water, stock paste, broccolini, 6 cherry tomatoes and approx half of your basil leaves.

    Cook for  10 minutes at 100ºC on Counter-clockwise operation"Counter-clockwise operation" Reverse + speed 1.5.  Place simmering basket instead of MC into mixing bowl lid. 

    After 10 minutes add remaining cherry tomatoes & extra basil leaves to tasate. Cook for  3 minutes at 100ºC on Counter-clockwise operation"Counter-clockwise operation" Reverse + speed 1.5.  Place simmering basket instead of MC into mixing bowl lid.

    Transfer into ThermoServer on top of spinach. Sprinkle with the reserved parmesan cheese and extra knob of butter & leave to rest for 5 minutes. 

    Gently stir to combine & serve immediately  

Tip

Sprinkle with extra parmesan and cracked black pepper if desired.

    My favourite risotto to date and it cooked the perfect amount for two people. The only thing I changed was that I added the brocollino only in the last couple minutes as I prefer it not so well cooked

    Delicious Thank you. I used grated zucchinin instead of Broccolini and it was lovely. Great way to use up produce from the garden - zucchini, tomatoes and basil.

    full of flavour!

    I made this last night and it was really nice, it was quick and easy I just used broccoli and forgot the butterfly but it was perfect tmrc_emoticons.) I may have to adjust the amounts next time as I needed it for 2 adults and 4 kids and it only just stretched. Thanks for sharing tmrc_emoticons.)

    This was a great recipe, very hearty and lots of goodness. I cahnged it up a little bit by adding 240grams of rice, 120 grams of Wine and 1 tablespoon of veggie stock, it was very flavoursome and easliy catered for 4 adults. if there is any left over its even better the next day!

    This was amazing! I made this for myself, my 3yo and my 10 month old. We all loved it! Mr fusspot 3yo wasn't a fan of the broccolini or the tomato - no matter, all the more for me! And we had leftovers. Can't wait to make this again for hubby! Thank you!

    This was delicious. All three children LOVED it, even the super fussy one. I used broccoli and added diced cooked chicken I had left over. Made way more than 2 serves, but that is fine as it was a success Party
