Ingredients
Chicken, bacon, zucchini & Spinach Risotto
- 40 g Parmesan block
- 1/2 zucchini diced
- 1 chicken breast or thigh diced
- 2 Bacon rashers diced
- 2 teaspoons Edc vege stock concentrate
- 450 grams water
- 3 Spring Onion trimmed and cut into pieces
- 1 clove garlic
- 2 tablespoons olive oil
- 180 g Aborio Rice
- 120 g white wine
- 15 g Butter
- 1 stalk Celery
- baby spinach leaves to taste

Place Parmesan Cheese into mixing Bowl and Grate 10 sec/speed 8 Set grated parmesan to the side.
Place baby Spinach leaves into thermoserver and set aside.
Place Spring onions, Garlic & Celery into TM bowl and chop for 6 seconds on speed 7.
Add olive oil and bacon and sauté for 5 minutes at Varoma on "Counter-clockwise operation" Reverse speed 1.
Add zucchini and saute for 2 minutes at Varoma on "Counter-clockwise operation" Reverse speed 1.
Insert butterfly whisk.
Add risotto rice, butter and wine then sauté for 2 minutes at 100ºC on "Counter-clockwise operation" Reverse + speed 1.5 without MC.
Scrape down sides of bowl with spatula. Add water, stock paste and Chicken and and cook for 13 minutes at 100ºC on "Counter-clockwise operation" Reverse + speed 1.5. Place simmering basket instead of MC into mixing bowl lid.
Transfer into ThermoServer. Sprinkle with parmesan and extra knob of butter & leave to rest for 5 minutes.
Gently stir to combine & serve immediately
Tip
Sprinkle with extra parmesan and cracked black pepper if desired.

Love this. I basically double everything except the bacon, I put in 6 rashers, and I omit the parmesan and spring onions. It makes enough for 2 dinners for 2 adults and a toddler and then some! I actually used basmati rice the first time by mistake but it came out fantastic so I use it every time now. So filling and delicious.
Such an easy recipe, and was so yum! I rN out of garlic cloves and had to used minced. Definitely will be having this again!
I doubled the quantities and cooking time and took out the chicken and added peas and broccoli when there was about 10 mins to go, also used tablespoons of stock instead of teaspoons and the flavour was delicious. will definately make this again
Delicious! My husband loved & he's not a risotto fan! Added broccoli, cooked bbq chicken & peas with 5 min to go! Also added 1 tsp extra veg stock & replaced parmasen with fetta - thanks
Best risotto we've had in the thermometer. We changed out the butter and it was maybe a tad too liquiddy but the taste was great. Straight to the pool room for this recipe.
