Creamy Tomato, Chicken & Bacon Risotto
- 70 g Parmesan cheese, Cubed
- 150 g Rindless Bacon
- 2 --- garlic cloves
- 400 g canned diced tomato
- 50 g olive oil
- 1 tsp dried mixed herbs
- 1/2 tsp cracked pepper
- 1/2 tsp salt
- 1 --- brown onion, Peeled & halved
- 30 g Butter, Cubed
- 350 g arborio rice
- 100 g dry white wine
- 2 --- chicken breasts, Sliced thinly
- 750 g chicken stock
- 200 g Cream (for cooking)

- Place parmesan cheese into TM bowl and grate for 10 seconds/speed 9. Set aside. Wash and dry bowl.
- Add bacon and garlic cloves to TM bowl and chop for 5 seconds/speed 6. Scrape down sides and continue if not quite chopped enough.
- Saute bacon and garlic for 2 minutes/varoma/reverse "Counter-clockwise operation" /stir"Gentle stir setting" with MC off.
- Add tomatoes, half oil (25g), mixed herbs, salt and pepper and simmer for 15 minutes/100 degrees/reverse"Counter-clockwise operation" /stir"Gentle stir setting"
- Transfer to thermoserver to keep warm. Wash and dry mixing bowl.
- Add onion to TM bowl and chop for 3 seconds/speed 6. Scrape down sides of bowl.
- Add remaining oil (25g) and butter and saute for 5 minutes/100 degrees/speed 1 with MC off.
- Insert butterfly. Add rice and wine and saute for 2 minutes/100 degrees/reverse"Counter-clockwise operation" /speed 1.
- Add chicken, stock and cream and cook for 20 minutes/100 degrees/reverse"Counter-clockwise operation" /speed 1.
- Pour into thermoserver and stir through parmesan cheese. Allow to rest for 5 minutes before serving.
- Garnish with parsley if desired.

- If you like chilli, you could add in step 4.

Is whisk necessary or can I just reverse?
I have made this twice now and both times it has been devoured. The flavours work so well together and it is so easy as most ingredients are pantry staples.
Very nice. I sprinkled lime juice over the top before eating. very easy to make.

OMG this was so delicious. Makes heaps and pretty much what you have in your fridge, pantry. Just need to buy the cream - I don't always have cream on hand xx good recipe for the weekends when guests may stay an extra day/lunch etc X thank you for sharing this amazing recipe will def be a go to fav for me.
