Ingredients
Mums Full House 3 C's Risotto
- 45 g Parmesan cheese, Cut in Chunks
- 1 onion, Peeled and quartered
- 100 g leek, White part, roughly chopped
- 100 g celery stalk, Roughly chopped
- leaves parsley, Flat leaf kind, small handful
- 60 g extra virgin olive oil
- 350 g arborio rice, Washed
- 80 g dry white wine
- 850 g water
- 2 heaped tablespoons chicken stock paste
- 1-2 chorizo sausage, Sliced 0.5cm
- 200 g chicken, Raw, cubed 1-2cm

- Place Parmaesan Cheese into mixing bowl and "Blend" grate 10sec/ speed 9.
Scrape cheese put of mixing bowl with spatula, transfer to a bowl and set aside. - Place onion, leek, Celery and parsley into mixing bowl and "Blend" chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add 65g of extra virgin olive oil, place simmering basket instead of measuring cup onto mixing bowl lid and "Slow Cooking" saute 3min/100"Warm Up" /speed 1."Thickening"
- Add rice and without measuring cup, saute "Slow Cooking" 3 min/100"Warm Up" /speed 1.
- Add wine and without measuring cup, saute"Slow Cooking" 3 min/100"Warm Up" /speed 1.
- Add water, stock paste, chorizo and chicken. Scrape bottom of mixing bowl thoroughly with spatula to loosen rice. Place simmering basket instead of measuring cup onto mixing bowl lid and cook for "Slow Cooking" 20 min/100"Warm Up" /"Counter-clockwise operation" reverse/speed 1. Carefully remove simmering basket and set aside. Allow risotto to rest in mixing bowl for 1 minute, then transfer into a serving bowl. Using a spatula combine the reserved parmesan cheese with the risotto. Serve immediately.
Tip
I used Garlic and Rosemary Extra Virgin Olive oil. Add garlic and rosemary to the 2nd Step.
Liquid absorption can vary according to type of rice. If risotto seems dry before it is cooked through, add more liquid.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
