Ingredients

Thai chicken risotto

  • 1 brown onion, cut in half
  • 2 garlic cloves
  • 1 long red chilli, seeds removed, cut into 2cm pieces
  • 2 fresh kaffir lime leaves
  • 1 tablespoon peanut oil
  • 330 grams arborio rice
  • 75 grams Thai red curry paste, Use thermomix recipe from Basic cookbook - quarter of a cup
  • 500 grams skinless chicken thighs, Cut into 2cm pieces
  • 500ml chicken stock, Asian chicken stock if possible
  • 150ml water
  • 2 tablespoons fish sauce
  • 250ml can coconut cream
  • 200 grams green beans, trimmed, chopped into 2cm pieces
  • fresh coriander leaves, to serve

Recipe's preparation

    Thai chicken risotto
  1. Place brown onion, garlic, chilli and kaffir lime leaves into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  2. Add peanut oil and saute 3 min/120 degrees/speed 1.
  3. Insert butterfly whisk. Add arborio rice and Thai red curry paste and saute. 1 min/120 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, without measuring cup.
  4. Add stock, water, and chicken. Cook 18 mins/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup. Check rice for consistency. If too firm, cook a few minutes longer.
  5. Transfer into ThermoServer. Add fish sauce, beans and coconut cream. Mix together using spatula. Place lid on and sit for 10 mins to allow beans to soften slightly. Serve topped with fresh coriander leaves.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
