Ingredients

Quince Paste

  • 1500 gram quinces
  • 1000 gram sugar, approximately
  • 600 grams water
  • 1 cinnamon quill
  • 5 cardamon pods
  • 1 star anise
  • 4 whole cloves
  • 2 lemons, peeled and juiced

Recipe's preparation

    Quince Paste
  1. Put another bowl on top of TM, tare scale and weigh whole quinces. Wash the quinces with a brush to remove fur, then peel and core. Place the peel and cores into the TM bowl and the roughly chopped flesh of the quinces in the Varoma basket. Add the spices, water and lemon peel to the TM bowl and chop for 30 sec/speed 9.

     

  2. Place the Varoma dish in position, and steam for 25 min/Varoma/speed 2.

     

     

  3. Remove the Varoma tray and set aside.  Over a separate bowl, strain the peel and core mixture through a fine sieve and collect the liquid by strirring the pulp. Discard the pulp, clean the TM bowl and weigh the liquid and pieces of quince in the TM bowl.  Note the weight. (Aprox 1400gm).  Blend for 30 sec/speed 6.

  4. Add 3/4 of the weight of the steamed quince and juice in sugar (approx 1000gr) to the TM bowl. Add the juice of two lemons.   Mix for 20 sec/sp7. Make sure you are not above the Max line on the bowl. Cook for 50 min/Varoma/speed 3.  Replace measuring cup with Varoma basket without the lid to prevent splatters.

     

     

  5. Once cooked, allow the sticky mixture to cool for about 10 minutes, then pour it into a tray lined with baking paper. Pour in the centre of tray and using TM spatula carefully spread to corners. 

     

     

  6. Allow the tray to cool before covering and placing in the fridge to set completely.  Once set, the paste can be cut into pieces. I like to wrap in baking paper and storing in airtight container which makes it easy to give as gifts or use, but it can be layered with glad wrap or baking paper.  It keeps for months in the fridge.
