Cucumber Relish

  • 2000 g cucumber
  • 1 red capsicum
  • 1 green capsicum
  • 1 red onion
  • 20 g Mustard seeds
  • 70 g salt
  • 350 g sugar
  • 430 white vinegar

Recipe's preparation

  1. Peel and chop cucumber
  2. Cut capsicum and onion into quarters
  3. Chop 3 seconds speed 5, scrape down sides
  4. Add mustard seeds, salt, sugar and vinegar
  5. Place varoma dish on top and cook for 60min, 120°C, reverse blades speed 0.5
  6. Mix 2 tbsp cornflour and water to make paste. Add to bowl and cook for 2min, 100°C, reverse blades, speed 1
  7. Carefully pour into sterilised jars, seal and invert for 10min. Cool completely, then store in pantry until ready to serve.

    The quantities in this are all wrong - 2000 cucumber won't fity in any TM - I cut it back to 1000 and it still boiled over - also no mention of the cornflour in the ingredients - give it a miss - I managed to save the batch by moving it out of a TM and into a cast iron pot - not sure what the result will be yet
