- 2000 g cucumber
- 1 red capsicum
- 1 green capsicum
- 1 red onion
- 20 g Mustard seeds
- 70 g salt
- 350 g sugar
- 430 white vinegar

- Peel and chop cucumber
- Cut capsicum and onion into quarters
- Chop 3 seconds speed 5, scrape down sides
- Add mustard seeds, salt, sugar and vinegar
- Place varoma dish on top and cook for 60min, 120°C, reverse blades speed 0.5
- Mix 2 tbsp cornflour and water to make paste. Add to bowl and cook for 2min, 100°C, reverse blades, speed 1
- Carefully pour into sterilised jars, seal and invert for 10min. Cool completely, then store in pantry until ready to serve.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

The quantities in this are all wrong - 2000 cucumber won't fity in any TM - I cut it back to 1000 and it still boiled over - also no mention of the cornflour in the ingredients - give it a miss - I managed to save the batch by moving it out of a TM and into a cast iron pot - not sure what the result will be yet
