Ingredients

Kickin BBQ Sauce

  • 90 g brown onion, Quartered
  • 2 cloves garlic
  • 20 g olive oil
  • 1 teaspoon coriander seed, ground
  • 1 teaspoon cumin seed, ground
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cayenne pepper
  • 35 g brown sugar
  • 20 g vinegar, malt
  • 100 g tomato sauce
  • 25 g Dijon mustard
  • 20 g Worcestershire sauce
  • 230 g water

Recipe's preparation

    Step 1
  1. Add onion and garlic to bowl, 5 seconds, speed 5, MC on. Scrape bowl. Add oil, cook 2 minutes, 100°C, speed 1.

    Add dry spices, cook 5 minutes, 90°C, speed 1. Add sugar and vinegar, mix 5 seconds, speed 2.

    Add sauces, mustard and water, cook 8 minutes, 100°C, speed 2, basket on lid.
    Scrape bowl, then cook 20 minutes, 90°C, speed 2, MC off.
    Activate Blend Mode on TM6, 30 seconds, speed 6.5, MC on.

    Allow to cool and bottle into sterilised jar or bottle and serve as a dipping sauce for chicken wings, burgers, steaks.

Tip

Adjust cayenne to your liking.
