Mum's Mayo
- 115 grams Butter, cut into 2 cm cubes
- 120 grams malt vinegar
- 2 level teaspoons mustard powder
- 400 grams condensed milk, 1 tin
- 1 egg, raw
- Salt & Pepper, generous pinch

- Place cubed butter in TM bowl and melt 2 min/100/Sp 1 (or until completely melted)
- Add vinegar, mustard powder, condensed milk, egg, salt and pepper to the TM bowl and mix 1 min/Sp 4
- Scrape out with spatula into large jar (with lid), and refridgerate.
Tip
Note: This mayo is a bit like a salad cream!
It will thicken as it sets in the fridge. It's great for spreading on sandwiches straight from the jar.
If you want a pouring mayo, just scoop out from the jar as much as needed into a small jug and add milk or cream to reach right consistency; or it can be used as a thick mayo by placing as much as needed in a small dish and putting on the table as is when serving salads.
This mayo is also great for making coleslaw, potato salad or pasta salad with.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
