Ingredients

- 600 - 650g veggies of your choice, (cucumber, zucchini, cauliflower, onion are good ones)
- 1 litre water
- 50g ground rock salt
- 320g apple cider vinegar
- 200g raw sugar
- sprig fresh dill, chopped finely
- 30g mustard powder
- 10g curry powder
- 10g tumeric
- 40g Corn Flour
- 100g Additional water

I'm cooking this todayRecipe's preparation
- Wash andchop veggies into even sized chunks before adding them to the TM bowl and chopping on speed 6 for 3 - 4 seconds (depending on how chunky you like your pickles)
- add 1 litre water and salt and cook for 10min / 100°c / speed 3/"Counter-clockwise operation"
- drain in TM basket then put back in the TM bowl with sugar, vinegar and spices and simmer on 90°c for 15min/ "Counter-clockwise operation" / "Gentle stir setting"
- Mix the cornflour, dill and 100g water in a cup or small bowl
- Increase the temprature to 100°c and add the cornflour mix to the Thermomix bowl via the lid hole and cook for a further 1 min.
- Pour into sterilized jars and seal immediately.

Tip
It's important to add the dill at the end, if you add it with the other spices it will loose it's colour etc.
It makes approx 1.1 litres which for me filled 3 x 360ml jars and a bit left over
I made this to my own tastes, you can of course vary it to your own levels of spice & sweetness.

Paprika is an app that you can add recipes to and view on phone iPad. That's how I store a lot of them.
meggie73: I don't know if it's salvagable, the only thing I could suggest is adding more sugar to balance the vinegar out, but I am not sure it would work. I didn't have paprika in my recipe? It soulds like a full re-do my provide the best results. Best of luck.
I just made this but unfortunately had only half the vegetables as I had the wrong setting on paprika 😂. So everything else is the full recipe ingredients and it tastes a bit vinegary. I don't think I added 50 g salt (probably 20 only). Is there anything I can do now to decrease the vinegar taste?

This was super delicious and I am slightly addicted to it already!
I added some whole spices - coriander seed, black peppercorns and yellow mustard seed and reduced the powdered spices slightly. Also didnt add the dill.

I modified the spices as below after reading the comments and it came out just right for me.
It made 970gms of pickles, I had about 700gms of veges to start with.
300gm vinegar
20gm mustard powder
10g curry powder
10g tumeric
Surely the spice measurements in this recipe are incorrect- this is way too strong!
Should have read the comments prior to making ... def too much mustard, curry and turmeric... any ideas on how to reduce heat ?
First time i made this, veggies chopped up too fine and i wasn't keen on the curry flavour so this batch, have watched my chopping, omitted the curry powder, less tumeric and seems to be OK. Will wait until cool to see how it tastes.
I researched some classic recipes and combined them with this method
This was my result
Omitted the curry powder
320g vinegar
1tsp coriander seed
1tsp black peppercorns
20g yellow mustard seed (instead of powder)
Omitted the dill
Turned out great. Good balance. Will make again. Next time I might hand chop the veggies, I like a much chunkier pickle.

I find this way too sweet for my liking. If I make it again I will halve the sugar.
