Ingredients

Sauce:

  • 10 cloves garlic
  • 4 large red chillies
  • 2 large red capsicums
  • 20 g ginger
  • 8 Kaffir lime leaves
  • 3 lemongrass stems
  • 1 bunch coriander
  • 150g honey, or more to taste
  • 100g apple cider vinegar
  • 50g fish sauce
  • 1 teaspoon salt

Recipe's preparation

    Sauce:
  1. Roughly chop all vegetables and herbs.

  2. Place vegetables and herbs into TM bowl and chop 10 seconds, speed 6, or until desired consistency is reached.

  3. Add remaining ingredients.

  4. Cook at 90deg, 20 minutes, speed 2 with MC off and basket sitting on lid to avoid any spitting.

  5. Pour into sterilised jars and keep in fridge.

    Thai Sweet Chilli Sauce
    Thanks KtLi. I just made a good sized jar of this. I didn't have any lemongrass or apple cider vinegar. I used ordinary white vinegar and didn't use as much honey (only had 110g) but it still tastes great. Maybe the extra honey makes it a bit thicker when cooled? It tastes really good and can't wait for it to cool to have with some corn fritters for dinner. So nice and easy.
