Ingredients

Curry Paste

  • 80 grams onion
  • 20 gram lemongrass stem
  • 5 gram fresh ginger
  • 10 clove garlic
  • 15 grams fresh corriander root
  • 10 grams coriander seeds
  • 10 grams tumeric, fresh
  • 2 tbsp galangal, fresh root
  • 20 gram fish sauce
  • 20 grams cumin seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 lime juiced
  • 2 tbsp shallots
  • 4 Kaffir lime leaves
  • 20 grams shrimp paste
  • 20 grams sugar, coconut
  • 20 grams vegetable oil
  • 5 grams paprika, red
  • 3Thai long chilies (yellow or orange)
  • 8 cloves
  • 2 tsp chilli, dried, Thai Hot

Recipe's preparation

    Curry Paste
  1. Add lemongrass, dried chillis, ginger, garlic and corriander root to TM bowl and chop for 10 seconds on speed 7.

    Scrape down sides and repeat.

    Add onion and chop for 6 seconds speed 6.

    Add all remaining ingredients and and mix for 20 seconds on speed 4.

    Scrape down sides and repeat for another 20 seconds or until the curry paste has formed a semi smooth paste.

Tip

If spicier is required add more dried or fresh chillis.
