Ingredients

Mexican Chorizo Stuffed Potatoes

  • 6 sprigs Flat leaf Parsley, fresh, leaves only
  • 2 sprigs Basil, fresh, leaves only
  • 2 Spring onions, roughly chopped
  • 1 Chorizo sausage,skin removed & roughly chopped, (from the Deli section of the supermarket)
  • 1/2 Red onion, chopped in half again
  • 1 clove garlic
  • 5 g rice bran oil or olive oil
  • 4 Potatoes, large (or 6 medium), chopped in half sideways
  • 600 g water
  • 50 g sour cream
  • 1/2 tsp Hot Mexican sauce (Peri-Peri,Franks or Tabasco), adjust quantity to taste
  • Salt & pepper to taste
  • 20 g Parmesan cheese, fresh, grated

Recipe's preparation

    Mexican Chorizo Stuffed Potatoes
  1. 1. Place Parsley, Basil & spring onions in TM bowl, chop 3sec/speed 6, set aside.

    2. Place Chorizo sausage, red onion & garlic in TM bowl, chop 4sc/speed 7. Add oil, saute 4min/100*/speed 1. Set aside in a bowl lined with paper towel to absorb excess oil.

    3. Add water to TM bowl, arrange potatoes in Varoma dish (& tray if needed) with cut sides up and lid on, place on top of the Themomix bowl and steam for 25-30 min/Varoma/speed 1-2.

    4. When potatoes are cooked until just tender, arrange them in an oven tray lined with baking paper, cut sides up. Empty the TM bowl, rinse with a little cold water and set aside to cool a little while you hollow out the potatoes with a teaspoon (place these potato chunks in the TM bowl as you do it). Preheat oven to 200*C.

    5. Add the Chorizo mixture, hot sauce, sour cream & 3/4 of the chopped herb mixture to the potato chunks in the TM bowl, mix 10sec/speed 1.

    6. Fill the hollowed out potatoes with the potato-Chorizo mixture, top with the left over chopped herb mixture, salt & pepper to taste, grated Parmesan cheese. Bake for 10-15 min or until slightly golden brown on top. Serve with extra sour cream if desired.

Tip

You can substitute Basil with Coriander, or even use both.

They are also nice without the Parmesan cheese on top.

    These were delicious! I replaced the chorizo with bacon and didn't have any mexican sauce and they still turned out great!
