Ingredients
- 2 onions, halved
- 2 cloves garlic
- 2 tablespoons olive oil
- 350 grams cauliflower, broken into florets
- 400 grams tin chickpeas, drained
- 400 grams tin coconut cream
- 150 grams passata/tomato puree
- 150 grams water
- 1 tablespoon TM veg stock
- 1 pinch basil, fesh or dried
- 1 pinch salt

1) Chop onion and garlic for 3 seconds at speed 3. Scrape down sides of bowl.
2) Add olive oil. Saute 3 minutes 100' speed 1.
3) Add all other ingredients to the bowl. Cook 20 mins 100' speed 1.

DELICIOUS !!! .... loved it and will defs be making again regularly ! .... I also added 2 x cans of Ayam coconut cream (540 gms) .... I used just under 400 gms cauliflower .... so glad I didn't try doubling it cos never would have fit in a TM5 .... I also used Quirky Jo's ketchup as the passata/tomato paste component and added some chopped silver beet in the last couple of minutes of cooking 😍
So delicious! The entire family loved it. It was creamy, delicate & so easy. I was worried the cauliflower woudn't be cooked through but it was the perfect texture.

I did use about 140mls more of coconut cream as I wanted to use two fuill cans. Also 2 cans of chickpeas. I cant believe how tasty it was for such an easy recipe!
You can't taste the cauliflower. I did't mind the soup, the flavour was unusual. I don't think it would matter what vegetable you put in this soup, it would still taste the same because of the chickpeas and coconut cream. I pureed mine and it was lovely and thick.
Just made a batch and have to comment on how easy, fast and delicious this recipe is. Lunch for the week is sorted. Thanks for sharing.
