Chicken, ginger and lemongrass soup
- 1 pieces garlic
- 1 brown onion, Peeled and chopped in quarters
- 2 stalks lemongrass, With green part removed
- 2 sprig fresh coriander, With roots
- 2 Birdseye chilli, fresh, Deseeded if preferred
- 20g olive oil
- 10g sesame oil
- 2 level teaspoons ground turmeric
- 1 litres chicken stock
- 1 chicken breast, Chopped into cubes
- 1 Baby bok choy, Chopped into 1cm pieces
- 2 carrots, Thinly sliced
- 1 packages Angel Hair Pasta, Made with Konjac

- Place garlic, onion, lemongrass (chopped into pieces), coriander and chilli into bowl. Chop 3 seconds, speed 6. Scrape down sides of bowl with spatula. Repeat if necessary.
- Add oil and sesame oil and sauté 3 mins/120/speed 1
- Add turmeric powder and cook 1 min/120/speed 1
- Add chicken stock and chicken, cook 15 mins/90/speed 1 "Counter-clockwise operation"
- Add bok choy and carrots, cook 6 mins/90/speed 1 "Counter-clockwise operation"
- "Thickening" Add Konjac Angel Hair pasta and cook 1 min/90/speed 1 "Counter-clockwise operation"
- Serve and garnish with coriander leaves
Tip
1. Chilli can be replaced with Sriracha Sauce as desired
2. Other vegetables can be used such as shiitake mushrooms
3. Dish traditionally uses rice noodles which should be cooked as long as Noodle packet suggests at the end. I use Konjac pasta as it is very low in calories.
4. chicken stock can be replaced with Thermomix veggie stock.
5. Tastes way better than photo and is very healthy.
