Ingredients
Cashew Cream
- 100 grams Cashews
- 100 grams water
- 1 pinch salt
Soup
- 1 onion, peeled & halved
- 1 clove garlic
- 1 carrot, roughly chopped
- 1 stick Celery, roughly chopped
- 1 potato
- 30 grams olive oil, (or butter)
- 300 grams chicken breast, cubed
- 1-2 tbsp chicken stock paste, (to taste)
- 1 litre water
- Reserved Cashew Cream, (or 200g cream)

Mill cashews for 1 min/sp 9.
Add salt and water. Blitz for 1 min/speed 9 until a smooth paste is formed. Scape down sides of bowl and repeat as necessary. Set asside and rinse bowl clean.
Add onion, garlic, carrot, celery and potato to mixing bow. 3 sec/speed 7.
Add oil (or butter) and saute for 3 min/100°C/sp 1.
Add chicken and cook for 3 min/100°C/sp 1.
Add water, stock, and reserved cashew cream (or regular cream if using). Cook 30 min/100°C/sp 1.
Blend soup (slowly increasing speed 1- 9) for 1.5 min/sp 9 until a smooth consistency. Enjoy!

Tip
Vegetable Stock Paste also works beautifully with this soup if you haven't got Chicken Stock Paste in the fridge. Cashew Cream can be substituted for regular cream.

I used 900grams of water and it overflowed when blending. I turned the temp down to 90 degrees to stop it boiling over.
I found the texture grainy, but the flavour was good.

This is really yummy and not too many ingredients. I also used less water (800g) and vege stock paste.
This was delicious, but I needed to remove some of it before I could safely blend it. By the time I got to speed 4 the MC was jumping off and soup was coming out the top. I used chicken broth in place of water for extra goodness, and it's amazing!
I have made this twice now, and it is absolutely delicious. I added a bit more chicken, used the TM vege stock and a bit of chcken stock powder. This will be a regular in my house for sure. Thank you for a great recipe.

Great Soup - I used Vegetable Stock Paste as that was what I had and also put 600 of water instead of 1000. Just made to my taste and spinkled with pepper. Yum.
