Ingredients
- 100 grams Barley, Soaked and drained
- 2 carrots, Cut into quarters cut in half
- Fresh herbs
- 1 onion, Cut in half cut in half
- 1 potato, Cut in half
- 2 sticks Celery, Trimmed, cut into quarters
- 100 grams Bacon Bits
- 1 tbsp coconut oil
- 1 tablespoon chicken stock paste
- 1 litre water
- 1 bay leaf, dried

1. Soak barley in warm water with a tablespoon apple cider vinegar.
2. Place fresh herbs into mixing bowl and chop 2 secs/speed 7. Transfer to separate bowl.
3. Place onion, celery, carrots and potato into mixing bowl and chop 3 secs/speed 5. Scrape down sides of bowl. add coconut oil and cook 3 mins/Varoma/speed 1.
4. Add bacon and bay leaf and cook 2 mins/100*C/"Counter-clockwise operation" speed 1.
5. Add water, stock paste, soaked, drained and rinsed barley and cook 90 mins/100*C/"Counter-clockwise operation" /speed 1 or until barley is tender.
5. Season to taste and add extra fresh parsley. Add extra water if too thick.
Tip
This is a very tasty soup. I converted it from a favourite that I have been making on the stovetop.

This soup was delicious Maree! I soaked the barley overnight so it halved the cooking time really. I also used up some leftover roast potatoes and Christmas ham instead of bacon and it was great!

This is amazing! I make it all the time. I use home made chicken bone stock. Thank you
