Ingredients
Pumpkin, Barley & Sage Soup
- 40 grams olive oil
- 700 grams pumpkin, PEELED, CUT INTO 2cm CUBES
- 1 shallot, CHOPPED
- 2 cloves garlic, MINCED
- 1500 grams vegetable stock
- 150 grams pearl barley
- 2 grams sage leaves, FRESH (10)

Chop shallot and garlic 2-3 seconds, speed 7.
Add 1 tablespoon of the oil and 600g of the pumpkin, and cook for 10 minutes,100C,"Gentle stir setting" or until the vegetables are beginning to soften. Add the vegetable stock. Bring to a boil, (this will depend on the temp of your stock) ? Minutes,100C, then reduce the heat to a simmer, 95C and cook, MC off, for 20 minutes or until the pumpkin is completely soft. Puree until smooth. Set the pureed soup aside.
Wash and dry Bowl.
Add 1 tablespoon of the oil and the barley and sage. 4 minutes, Varoma, Speed 1"Counter-clockwise operation" or until barley is toasted. Carefully, add the pureed soup. Bring the mixture to a simmer 95C and cook, MC off, for 25 minutes"Counter-clockwise operation" . Add the remaining diced pumpkin and cook for 20 minutes, "Counter-clockwise operation" , until the barley and pumpkin are tender. Season the soup to taste with salt.
In a small bowl, and season with salt to taste.
Divide the soup among bowls.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.
We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.
All herbs are fresh (unless specified) and cups are lightly packed.
All vegetables are medium size and peeled, unless specified.
All eggs are 55-60 g, unless specified.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
