Ingredients
Rosemary and Lemon Sweet Potato Soup
- 1/2 lemon rind and juice
- 2-3 sprigs rosemary
- 2 cloves garlic
- 1 brown onion, peeled and quartered
- 30 g olive oil
- 2 tablespoons EDC vegetable stock concentrate
- 800 g sweet potato, peeled and roughly chopped
- 750 g water, (or up to 250g more if you want a thinner soup)

Chop lemon rind and rosemary on speed 7 for 3-5 seconds
Add onion and garlic, chop on speed 7 for 3-5 seconds
Add oii, saute on speed 2 for 3 minutes on 100 degrees
Add stock, lemon juice and water to the bowl. Place the sweet potato in the simmery basket. Cook on speed 3 for 25 minutes, 100 degrees.
Use the spatula to empty the sweet potato from the basket into the bowl. Slowly pulverise from speed 1 to 10 for 1 minutes.

Tip
Serve as is, or add a dollop of sour cream, cream, creme fraiche and some rosemary and cracked pepper.
