Ingredients

  • 1.5 cm piece of fresh ginger peeled
  • 1 red onion, halved
  • 1 tablespoon red curry paste from TM everyday cookbook
  • 1000 g butternut pumpkin, peeled, seeded and cubed
  • 500 g water
  • 100 g coconut milk
  • 2 teaspoons fishsauce
  • 2 teaspoons lime juice
  • 1 teaspoon palm or brown sugar
  • Fresh Corriander, to garnish

Recipe's preparation

    Method
  1. 1. Chop ginger for 2 seconds speed 8

  2. 2. Add onion and chop for 3 seconds speed 5

  3. 3. Add olive oil and curry paste and cook for 3 minutes, Varoma, speed 1

  4. 4. Add pumpkin and cook for 1 minute Counter-clockwise operation"Counter-clockwise operation" , Varoma, speed 1 

  5. 5. Add water and cook for 15 minutes. 100 degrees, speed 1

  6. 6. Continue cooking for 15 minutes, 98 degrees, speed 1 with MC removed and simmering basket on top instead.

  7. 7. Puree 1 minute, slowely working from speed 5 to 9.

  8. 8. Add fish sauce, lime juice, coconut and sugar.  Cook 3 minutes, 100 degrees, speed 3.

  9. 9. Serve topped with fresh corriander

Tip

This recipe is a Bill Granger recipe that I have converted for the Thermomix.  It is suitable for TM31 and TM5. It freezes well.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
