Ingredients

Chicken Meatballs

  • 500 grams chicken breast, diced and partially frozen
  • 2 cloves garlic, peeled
  • 1 --- onion, peeled & quartered
  • 1 zuchinni, roughly chopped
  • 1 carrot, roughly chopped
  • 3 sprigs Fresh Corriander
  • 1 Egg white only
  • 1/4 teaspoon cayenne pepper
  • salt & pepper, to taste

Spicy Mexican Soup

  • 2 teaspoons Cumin Seeds Whole
  • 2 teaspoons Corriander Seeds, Whole
  • 4 cloves fresh garlic peeled
  • 1/4 onion
  • 20 grams olive oil
  • 2 teaspoons sweet paprika
  • 1 tablespoon chilli flakes, (or 1 deseeded chopped chilli if preferred)
  • 900 g water
  • 1 tablespoon Vegetable stock paste
  • 400 g diced tomotoes, (can substiute a tin if preferred)
  • 1 small red capsicum, diced
  • 1 medium/large green capsicum, diced
  • 4 stalks Celery
  • 1 tin of red kidney beans, drained
  • salt & pepper, to taste

Recipe's preparation

    Chicken Meatballs
  1. 1. In your bowl, mince the chicken, garlic, onion and coriander.

    Mince 10 seconds / speed 10. 

    2. Scrape down the sizes of the bowl.

    3. Add the zucchini and carrot and mince to create a fine paste

    Mince 10 seconds / speed 10 (repeat if necessary)

    4. Scrape down the sides of the bowl.

    5. Add the egg white, cayenne pepper and desired salt and pepper

    Mix 5 seconds / speed 4.

    **please note this will be a wet mix**

    6. I found the easiest way to cook these is to drop spoonfuls into boiling water (very carefully of course), and when they rise to the top transfer them to a thermoserver until needed.

    (These can also be cooked in a varoma but will need to be done in about 3 batches due to the quantity, at around 15 mins each batch.)

    1. Put coriander and cumin seeds in the bowl.

     

    Mill 20 seconds / speed 9

     

    2. Scrape down sides and repeat if husks are still visible

     

    3. Add garlic and onion

     

    Chop 3 seconds / speed 7

     

    4. Scrape down sides

     

    6. Add olive oil, chilli powder, sweet paprika

     

    Saute 5 minutes / varoma temperate / speed 1

     

    7. Add water, stock paste, tomatoes, red and green capsicum and celery

     

    Cook 10 minutes / varoma / REVERSE / speed .5 (soft)

     

    8. Add kidney beans

     

    Cook 15 minutes / varoma temperature / REVERSE/ speed .5 (soft)

     

    9. Add salt and pepper to taste

     

    10. Pour over meatballs in the thermoserver and gently mix through before serving
