Ingredients
Pumpkin Soup
- 1 brown onion, quartered
- 1 cm knob of ginger
- 1 cm knob of turmeric
- 20 g Ghee
- 500 g pumpkin, Roughly chopped
- 1 carrot, Roughly Chopped
- 1 red capsicum, De-seeded, roughly chopped
- 500 g Chicken bone broth
- 30 g pure cream
- fresh chives, to garnish

Turn oven on to 220 degrees celcius. Place Pumpkin, Carrot and Capsicum in the hot oven to caramalise slightly.
Place lid on empty TM bowl, turn to Speed 7 and drop the onion, ginger and turmeric in to the bowl through the hole in the lid, until you no longer hear the pieces being flung around the bowl.
Add Ghee and saute 3 min/Varoma/Speed 1.
Add Capsicum, Carrot and Pumpkin to bowl and chop 15 sec/speed 7. Scrape down sides of bowl.
Add Bone broth and cook 20 min/100 degrees/speed 1.
Add cream (if using) and blend 1 minute/speed 9, gradually increasing from speed 1 to speed 9.
Serve hot, garnished with extra cream and chives.
Pumpkin Soup
Tip
This recipe is pretty versatile.
If you don't have turmeric, you can leave it out.
If you don't have any Bone Broth, you can substitute it for 1TBSP stock concentrate and 500g of water.
