Ingredients

Sweet Potato, Coconut & Ginger Soup

  • 30 grams butter or oil
  • 1 brown onion
  • 1 clove garlic
  • 1-2 stalks Celery
  • 2 medium carrots, cut into chunks
  • 1 Medium-Large sized Sweet Potato, peeled, cut into chunks
  • 3-4 cm Fresh Ginger Peeled
  • 40 grams Coconut (shredded or desicated
  • 100 grams red lentils
  • 1 bay leaf
  • 2 tbsp Vegetable stock paste
  • 1 litre Water or Butter Milk, or mixture of both

Garnish

  • sprigs Fresh Basil or Parsley, Optional

Recipe's preparation

    Sweet Potato, Coconut & Ginger Soup
  1. Place onion, garlic, celery, ginger, carrot into TM bowl – Chop 5 secs/Speed 6

    Scrape down sides of bowl with aid of spatula and add in butter/oil.

    Cook for 6 mins/100’C/Speed 1 with MC out of lid.

    Add sweet potato – chop 5 secs/Speed 6

    Add, lentils, coconut, bay leaf, water/butter milk and stock.

    Cook 15mins/100’C/Speed 2

    *Remove bay leaf*

    Puree soup 45 secs/Speed 9 (slowly turning dial from speed 1 to speed 9) 

    Top with fresh parsley or basil to serve.

Tip

Serve with hot crusty bread! with home made butter from your thermomix tmrc_emoticons.)

You could use the left over butter milk from your butter in this recipe!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Delicious but definitely only use a medium sweet potato. I didn't have lentils so added a can of kidney beans and one chili. Yum.

    delicious! made too much & couldnt fit it in the bowl, but i did have giant carrots & sweet potato.  Will make again
