Ingredients
- 1 Brown Onion (peeled & halved)
- 1 cm Fresh ginger (peeled)
- 600 g sweet potato (peeled)
- 500 g water
- 1-2 tbsp TM vegetable stock concentrate
- 100 g coconut cream
- --- large handful fresh coriander
- 30 g olive oil

Place onion and ginger in TM bowl and chop 3 sec/speed 6.
2. Add olive oil and sautee 2 1/2 mins/100deg/speed 1 (MC off)
3. Add sweet potato (cubed to MC size) and chop 5 sec/speed 6
4. Add water, coconut cream and TM vegetable stock concentrate and cook 20 mins/100deg/speed 1 (MC off and replaced by simmering basket)
5. Add large handful coriander and blend 1 min/speed 9 (gradually increasing speed from 1-6 slowly)
6. Pour into Thermoserver and serve with warm crusty bread.

easy and so yummy. I used minced ginger and added a teaspoon of red curry paste also. I used a fair bit of coriander as we had it in the garden and reduced the water to 325ml and increased the coconut cream to 140ml for a creamy soup. My husband added chill on his at the end. Thanks for a great winters night dinner!

I cooked this the night before eating. When first cooked it was on the thin and runny side, however overnight it thickened up beautifully. If eating straight away I would reduce amount of water.

This was lovely. So easy too. I added some fresh turmeric and a bit of garlic too. I used 350g water (instead of 500g), and left the MC on. Nice thick, creamy texture.

I didn't have enough sweet potato so added a couple normal potatoes to bulk it out.
I didn't have fresh coriander, so I added ground cumin. Easy and yum
